Pumpkin oatmeal muffins are the perfect tumble breakfast, or dessert!

Satisfied October! Fall temperature is last but not least in this article for real.  I’m always torn among remaining unfortunate summer time is around and being excited for tumble. I really like the fall- soccer, pumpkin anything, and my birthday! Following attending FNCE (a dietitian convention) in Florida last week and traveling to Epcot I am put in. Breakfast for dessert? Either! I suggest chocolate chips and sprinkles if you are picking a dessert possibilities. And I propose nuts, seeds, and/or fruit if you are opting for a breakfast choice. Pumpkin Oatmeal Muffins

  • 3 cups rolled oats
  • 1.5 tsp pumpkin pie spice (or 1/2 tsp cinnamon, nutmeg, cardamom)
  • 1/2 salt
  • 1/2 tsp baking soda
  • 1 cup pumpkin puree
  • 1 tsp vanilla
  • 1/2 cup applesauce
  • 1/4 cup maple syrup or honey
  • 2 eggs
  • 1/2 cup chocolate chips optional
  • Preheat oven to 350

  • Incorporate dry elements: oats, spices, salt, and baking soda

  • Combine wet substances: pumpkin, applesauce, maple syrup, and eggs

  • Fold damp substances carefully into dry ingredients (adding chocolate chips here if working with)

  • Stir until just merged

  • Scoop into muffin tins and bake for 20 minutes.

  • Provide heat (I store in fridge and warmth up as needed)
